The ingredients required to make the salad are: 2 large beets (cooked and peeled), 1 teaspoon orange zest, ¼ cup goat cheese, 1 tablespoon honey, 2 tablespoon salted pistachios (chopped). If you do not like goat cheese, replace it other creamy-textured cheese, like ricotta.
To make the salad, slice the beet and lay them on the serving plate. Top them with orange zest, salted pistachios, and cheese. Last but not least, drizzle the honey on top of salad.

- ¾ cup quinoa, cooked according to package instruction
- 2 bell peppers, halved lengthwise
- 1 cup parmesan cheese
- 1 cup mozzarella cheese
In large bowl, combine cooked quinoa and parmesan cheese. Sprinkle salt and pepper to taste. Prepare baking sheet and place pepper halves cut on it.
You can stuff quinoa mixture inside each of pepper. Top it off with mozzarella cheese. Bake peppers in preheated oven at 350 F for 20 minutes until the peppers are tender and the cheese melts.
Cranberry and Ginger Slushy
For beverage, make this simple juice. The combination between cranberry and ginger can boost your immune system and provide huge amount of vitamin A and C.
Prepare 1 cup of fresh cranberry, ½ inch ginger, and 1 cup ice cubes. Mix all those ingredients together in blender glass and process until everything is well-mixed. Pour the slushy into serving glass and garnish with lemon slices.
If you want the slushy to be sweeter, add 1 tablespoon honey. Also, if you want the slushy to be creamier, replace the fresh cranberry with frozen cranberry.
